饅頭《manju》

饅頭《manju》 : Steamed bun or steamed bun with filling.
Manju is the one of traditional and popular food in Japan. 
Home made manju brings back memories of my childhood. My grandmother’s old sister used to make many manjus for us.

I searched "饅頭" on the Instagram.
Many photos of "饅頭" are taken by Chinese, Korean and Japanese. And three different languages were used for the tag.
It shows the "饅頭" it’s own history.

In Chinese, the pronunciation is “mantou”
Most of them looks like white steamed bun that has no filling.
In Korean, the pronunciation is “mandu”
And it looks like the “ Jaozi/Gyoza”  ( In Chinese: 子, 餃子/ Japanese: 餃子 )that we eat in Japan and China. 餃子and 饅頭 are similar food.
In Japanese, the pronunciation is “manju”.
It is obvious that the way to cook have introduced from china to Japan.
Recently the manju is recognized as traditional Japanese sweets, and it has a image of round and plumped.
Japanese "饅頭" always have filling called "anko". Even it is small and with a thin skin, it is still called Manju.
A type of Manju looks like steamed bun with a thick skin is especially called “Chuka-man" ( means; Chinese manju).


I got smilax china leaves. 
We use this leaves as a wrap for making manju or mochi cake.
This is dry type, so they need to be rehydrate.
Manju make from very simple ingredients.
Flower, sugar, azuki, are the three main ingredients and some baking powder, salt, and water. That’s all.
If you don't use baking powder, it will become “dango”.


It takes time to make anko, but I feel it is an interesting category of food to explore.  And I think it is natural that the manju become popular in Japan, as it is very easy to change its flavor by changing the filling inside.  

おむすび《omusubi》

日本人にとって、塩と水をつけた手で、炊いたうるち米を塊にまとめ、海苔で巻く、この食品は、最も基本的で馴染みのある食べ物であるように思っていた。

先日海藻について調べた際に、それはあくまでここ数十年の間に生まれ育った日本人にとって言えることなのだということを知った。

おむすびを描けといわれたら、多くの人が白い米と黒い海苔を描くのでは、と思うのは私だけではないだろう。そもそも、まず、うるち米が毎日誰でも食べられるということが、50年以上前の日本では当たり前ではなかった。白米の常食化が、戦後一番重大な食事の変化であるらしい。それだけでなく、板海苔も50から60年ほど前にようやく日本津々浦々に行き渡るものになったそうだ。今日、海草の中でも食卓で最もよく目にするあの海苔は、千三百年以上もの長い歴史を経て、数十年前にようやく日本中に一般化した食品になったのである。

試しに、父親に、子供の頃この様なおむすびを食べていたかと尋ねてみたら、少し考え、そういえば確かに、おむすびは食べていたが、このようではなかった。白米などはなく麦やらその他混ざったもので、海苔は、子供の頃は家にはなかったし、食べたこともなかった。とのことで、本当にそうであったかととても驚いた。

Several kinds of dried sea weed are generally available on the market in Japan.
Komb, Wakame, Nori (Uppurui-nori/Susabi-nori), Hijiki......

Kayamonori : 
茅藻海苔 : カヤモノリ〈ムギワラノリ/ジンジノリ/ナノリ/カイノリ/ガネガス〉
Habanori : 羽葉海苔 : ハバノリ〈ハバ/ハンバノリ/カシカメ〉
Funori : 布海苔 : フノリ



Funori

[Preparation] Soak them in water. It is enough to reconstitute them even ten minutes.
Illuminated them. Their right figure appeared.

[Eat] Sashimi garnish. Serve with raw fishes.

[Preparation] Parch them lightly.

Their color change from dark green to bright green, their preparation is finished.

I like them. They are rustic food. 
And they are available only during season.

In the world, Sushi is the most popular food in Japanese food.
And Sushi is loved by Japanese too as being special.
I will keep gathering something on this theme.

SHOYU-NO-MI

Make "shoyu-no-mi".

醤油の実、しょいのみ、醬、諸味
Shoyu-no-mi(Shoinomi), Hishio, Moromi
Shoyu-no-mi is a one of traditional japanese seasoning and condiment and also eaten as food.
To explain it as simply, shoyu-no-mi is the mix of soy sauce and materials of halfway processed soy sauce.


I got the ingredients of shoyu-no-mi at a soy sauce brewery.
These are molded soy/wheat/rice with Aspergillus oryzae or Aspergillus sojae, and are alive.
To make shoyu-no-mi you can use soy sauce, sweat sake, sake or sugar.
I don't like sweet taste that much, so I make it with only soy sauce.
Some time stair them. So all I have to do is wait.



Shoyu-no-mi is sold in the stores usually in a plastic bag, case or glass jar.

 The looks of shoyu-no-mi does not change that much before and after.

Rice and pickles. A poor meal? frugal meal?

Handy crafts lacquer wears are high-quality articles in our time.












This is a cheep meal. Sashimi konnyaku with  sea lettuce, and vinegared miso. This food is suitable for summer.

Lily bulb. This is edible.
Peal  it and cut off the one side to V-shape. It is like a petal.Blanch them to be transparent skin in lightly-salted boiling water. Soak them in plum vinegar syrup.
So dreamy tone !
Ingredients : 1 cup water / 25g white sugar /  suitable amount  of plum vinegar.





This petals are very delicious!
