Shoyu-no-mi is a one of traditional japanese seasoning and condiment and also eaten as food.
To explain it as simply, shoyu-no-mi is the mix of soy sauce and materials of halfway processed soy sauce.


I got the ingredients of shoyu-no-mi at a soy sauce brewery.
These are molded soy/wheat/rice with Aspergillus oryzae or Aspergillus sojae, and are alive.
To make shoyu-no-mi you can use soy sauce, sweat sake, sake or sugar.
I don't like sweet taste that much, so I make it with only soy sauce.
Some time stair them. So all I have to do is wait.



Shoyu-no-mi is sold in the stores usually in a plastic bag, case or glass jar.

 The looks of shoyu-no-mi does not change that much before and after.
